From Persia to Napa by renowned chef and author Najmieh Batmanglij traces Iranian viniculture from ancient times to Napa’s Darioush winery, which is styled after Persepolis.

In its newest edition, second-generation proprietor Sally Kahledi contributes one of her favorite recipes rooted in Persian flavors, but with a healthy twist: Fava Beans and Dill Rice with Salmon Crust.

The 2022 Signature Shiraz exhibits a delightful fruit-forward profile with exceptional complexity and structure that will soften over time in the cellar. On the nose, a flourish of dried violet, rose hip, and bergamot aromas set the stage for densely packed fruits— blackberry compote, stewed blueberry, and juicy black plum.

The oil extracted from Coratina olives has a robust profile with pungent and intense fragrances. Green tea and freshly cut grass aromas abound, with oregano, mizuna and a hint of artichoke. This beautifully crafted oil showcases a long, peppery finish with hints of pie spice.

We tied it all together with 8 ounces of our Persian-style roasted pistachios packaged in a silver tin with screw-on lid, decorated with the Darioush seal.
